Pumpkin Subzi
A tasty side dish with Rice / Rotis
Serves: 2 - 3
You will need
2 teaspoon oil
1/2 teaspoon jeera (cumin seeds)
1 dries red chilli
250 g pumpkin, peel off skin and cut into desired shape or cubes
1/2 teaspoon salt

For the paste:
3 green chillies
4 cloves garlic
4 tablespoon (50 - 60 g) chopped coriander leaves

Make a paste of above ingredients in a mixer.
Method
Heat oil in a pan. Add jeera and fry on a low heat till brown color and fragrant.
Add broken red chilli and green chilli - garlic - coriander paste. Stir well for 3 minutes on a low heat until the raw smell goes.
Add pumpkin pieces and salt to taste. Do not add water when cooking. Cover with a lid and cook on a low heat for 12 - 15 minutes or until done / water dries up / coriander mixture well coated on pumpkin. Switch off the heat and stir continuously for 2 minutes. Serve as a side with Rice / Rotis.
