Carrot Cake



Carrot Cake

A delicious cake !!

Makes: 12 slices

You will need

Tip: Please measure all the ingredients in standard measuring cups and teaspoon / tablespoon.

½ cup (100 g) all purpose flour

1 level teaspoon baking powder

1 pinch baking soda (cooking soda)

2 eggs

68 g sugar (make a fine powder)

2 tablespoons oil (or upto ¼ cup (50 ml) oil)

1 ½ cups grated carrot (2 medium size carrots)

Method

Grease baking dish with 1 teaspoon butter and dust with 1 tablespoon flour ( sprinkle about 1 tablespoon of flour inside a cake pan and shake to coat all greased surface. Turn pan upside down to tap out the excess flour ).

Preheat oven (OTG) at 170 *C or 325 *C (very moderate).

Make a fine powder of sugar.

Sieve thrice all purpose flour, baking powder and baking soda. Keep aside a separate container and gently mix with grated carrot.

In a wide bowl, beat an electric beater with eggs and powdered sugar until creamy and light yellow in color.

Add oil in 2 batches and beat well again until creamy.

Gently add flour – grated carrot mixture and mix with a thick tablespoon (do not beat with electric beater) until well combined.

Final procedure:

Transfer this cake mixture into a greased baking pan - ring, square or round (or paper lined ). Spread evenly with a spatula, and bake at 170 * C or 325 * F for 25 - 28 minutes or till golden color or till a skewer inserted in the centre comes out clean / leaves from the sides of the pan. Keep aside to cool for half an hour.

Run a knife round inside of the pan to loosen the cake, and then invert the pan. Cut into desired shape and size.
