Deep Fried Spicy Peanuts (Masala kappalandi)

An excellent accompaniment with Tea / Coffee.

You will need

250 g peanuts

1/2 teaspoon salt

1 teaspoon water

1 spring curry leaves (optional)

200 g oil

Spice powder:

3/4 teaspoon red chilli powder or 1/2 teaspoon Kashmiri red chilli powder

1/4 teaspoon hing (asafoetida)

1/2 to 3/4 teaspoon salt

Mix all the spice ingredients together and keep aside.

Method

Mix peanuts with salt. Sprinkle 1 teaspoon water and mix well. Keep aside for 20 - 25 minutes.

Heat oil in a frying pan. Reduce heat to medium and fry peanuts in batches (till golden color). Drain and place on kitchen paper to absorb excess oil.

After frying each batch of peanuts, mix spice powder (1/2 teaspoon for each batch) while the peanuts are still hot. This will result in even / good mixing of spice powder / masala on peanuts. Sprinkle deep fried curry leaves over it (optional). Serve with Tea / Coffee.
