Dates Tamarind Chutney or Khajur Imli Ki Chutney
A sweet & sour chutney. Best with North Indian snacks. Basic recipe adapted from Tarla Dalal.
Makes: 1 ½ cup
Ingredients
1 cup – standard measuring cup of 200 ml / 8 oz capacity (32 nos) dates (khajur), deseeded
1 teaspoon thick tamarind paste
3 tablespoons melted and sieved jaggery
½ teaspoon red chilli powder
a pinch of asafoetida (hing)
Salt to taste (or ¼ teaspoon)
Method
Wipe each dates with a soft kitchen towel and place them in a saucepan.
Add thick tamarind paste, jaggery, chilli powder, asafoetida, salt and 2 cups of water (400 ml) and simmer for 20 to 25 minutes.
Cool and strain the mixture through a sieve.
Use as required. Store refrigerated.
Tip:
You can also purée the chutney in a food processor and then strain it.
