Aloo Mutter Ki Dry Subzi for samosa filling / puris / rotis

Ingredients
1 tablespoon cooking oil
½ teaspoon mustard seeds
½ teaspoon jeera (
cumin seeds )
¼ teaspoon urad dal

½ teaspoon chopped ginger
4 curry leaves
3 potatoes, medium size ( boiled and slightly mashed )
½ cup / 100 ml fresh mutter / green peas ( shelled and separately boiled) Microwave cooking time for fresh mutter - 3 minutes @ 750 W - 1/2 cup mutter with 3 tablespoon water
½ teaspoon amchur
powder ( dried mango powder )
1/2 teaspoon salt ( or to taste )
1/2 teaspoon red chilly powder
½ teaspoon coriander powder
1 teaspoon garam masala powder (or ¼ teaspoon clove powder, ¼
teaspoon nutmeg powder and ¼ teaspoon cinnamon powder)
1 tablespoon chopped
coriander leaves (optional)
Method
Heat 1 tablespoon cooking oil in a pan on a medium heat. Add
mustard seeds. When they crackle, add cumin seeds (jeera), urad dal and fry for 1 minute.
Add sliced onion, green chillies, ginger and curry leaves and fry till fragrant and crisp on a low heat.

Add boiled and mashed potatoes, peas, salt, red chilli
powder, coriander powder, amchur powder, chopped coriander leaves and garam
masala powder. Mix all the ingredients well. Do not add water. Cover with a lid
and cook on a low heat for 10 minutes / until done / fragrant / all the ingredients well combined. Serve
as a side dish with puri / rotis / parathas / or use as samosa filling.
