Spicy sausage fry ( A tasty Indian dish )

You will need
8 chicken sausages, cut into 1/2 - inch size pieces ( or desired size )
1 tablespoon oil
1 onion or 15 shallots ( 1- 3 onion - depends upon the cost of onions ), finely sliced
1 spring curry leaves ( dark green )
4 cloves garlic, finely sliced
1/2 teaspoon Kashmiri red chilli red chilli powder
1/4 teaspoon pepper powder
1/4 teaspoon turmeric powder
2 teaspoon water
1/2 teaspoon salt ( or to taste )

Method
Dilute red chilli powder, turmeric powder and pepper powder in 2 teaspoon water and keep aside ( spice powder ).
Heat oil in a frying pan. Fry sliced onions till golden color.
Add curry leaves and garlic. Fry for 3 - 4 minute.
Add diluted spice powder mix. Stir well 3 - 4 minutes or until the raw smell disappears and water dries up.

Add sausage pieces, salt to taste and mix all the ingredients well.
Cover with a lid and cook on a low heat for 12 - 15 ( stir occasionally ) minutes or until done and all the spices well coated on sausages / golden color. Sprinkle extra pepper powder ( optional ) when serving.
Serve as a side dish with Rotis / Brown bread.
