Stuffed Bhindi fry



Stuffed Bhindi Fry ( Bhari Hui Bhindi )

Serves: 4 - 5

You will need

350 g whole, fresh bhindi ( okra )
1 tablespoon coriander powder
1 tablespoon cumin ( jeera ) powder
1 tablespoon raw mango ( amchur ) powder
1 teaspoon red chilli powder
3/4 teaspoon salt ( or to taste )
1 tablespoon oil
1 onion, finely sliced ( Dark purple color special shallots available @ vegetable shops in Chennai )

Method

Wash bhindi and dry thoroughly.

Trim okra and slit lengthwise without separating the pieces.

Mix spice powders ( coriander, cumin, red chilli and amchur ) and salt together in a bowl.

Stuff each bhindi with about 1/4 teaspoon of spice mix with your fingers, reserving any spices left over.

Heat oil in a flat frying pan on moderate heat. Add sliced onion and fry till just golden.

Add bhindi and fry for 2 -3 minutes.

Cover pan and cook for another 5- 8 minutes.

Remove from heat, sprinkle any leftover spice mix and serve hot as a side dish with Rotis / Rice.

I think okra is definitely better eaten fried. It' s one of those foods...
