Naan Khatai - A very delicious biscuit !!!!
Makes: 12 - 14
You will need
1/2 cup (50 g) rice flour
1 1/2 cups (150 g) maida (all purpose flour)
1 cup powdered sugar
1/4 teaspoon cardamom powder
3/4 to 1 cup ghee
1 teaspoon butter

Method
In a bowl, mix maida, rice flour, powdered sugar and cardamom powder.
Heat ghee a little and pour it on top of the mixture and knead it well for some time or until smooth dough. Do not add water while making the dough.

Keep the dough in an airtight container for 2 hours.
Preheat oven to 350 * F or 175 * C.
Grease baking tray with 1 teaspoon butter.

Knead the dough again and make small balls, flatten them slightly and arrange on a greased baking tray. Leave enough space between each biscuit (see the photo above) and bake for 15 - 20 minutes or until they turn light brown color in color.
Keep aside to cool and store in an airtight container.
