Baingan Kaap
Serves: 2
You will need
3 brinjals ( baingan ), pick tender
1 teaspoon red chilli powder
1/4 teaspoon turmeric powder
1/2 teaspoon salt ( or to taste )
2 tablespoon coarsely ground rice flour
2 tablespoon oil/ ghee for shallow frying

Method
Wash and cut the brinjals into rounds ( 1/2 cm thick ). Drain out water completely.
Apply salt and red chili powder. Keep aside for 15 minutes.
Roll them in the coarse rice flour just enough to coat the brinjal slices.
In a non stick pan, heat oil or ghee. Shallow fry brinjal slices until light brown on both the sides ( approximate frying time for each side - 8 - 10 minutes on a medium heat ). Serve with rice.
