Carrot Thoran / Carrot Sukke
Serves: 2
You will need
4 carrots, cut into desired shape
2 teaspoon cooking oil
1 teaspoon mustard seeds
1/4 teaspoon cumin seeds
1/4 teaspoon urad dal
1/2 teaspoon salt ( or to taste )
2 tablespoon water

For Coconut mixture:
1/4 cup grated coconut
1/2 teaspoon red chilli powder
1/4 teaspoon turmeric powder
1/2 teaspoon red chilli powder
1/4 teaspoon turmeric powder
Mix grated coconut with red chili powder and turmeric powder. Keep aside.
Method
In a pan, heat oil. Add mustard seeds. When they begin to pop, add cumin seeds and urad dal. Saute for 2 - 3 minutes.
Add diced carrot and coconut mixture. Mix well. Add salt to taste and 2 tablespoon water ( do not add more water ).
Cover with a lid and cook on a low heat for 10 minutes or till done and water dries up.
Serve as a side dish with rice.
