Vegetable Rice



Vegetable Rice

Serves: 2

You will need

2 cups cooked and cooled rice
2 teaspoon oil
1 onion, finely chopped
10 cloves garlic
1 - inch ginger piece
1 green chilli
8 French beans
1 carrot, medium size
3/4 teaspoon salt ( or to taste )

Method

Cut French beans and carrot into desired shape.

Make a smooth paste of ginger - garlic and green chilli with 1 tablespoon water.

In a wok / pan , heat oil. Fry chopped onion till pink in color.

Add ginger - garlic - chilli paste and saute for 5 minutes on a low heat or till raw smell goes.

Add chopped vegetables and stir well. Do not add water. Cover with a lid and cook on a low heat for 8 minutes.

Add rice and salt to taste. Mix well with vegetables.

Cover with a lid and cook on a low heat for 5 minutes.

Serve with any vegetarian or non - vegetarian gravy dishes of your choice. Other accompaniments - Curd, Pickle & Potato Chips.
