Aloo Methi
Serves: 3
You will need
1 bunch methi leaves
2 potatoes, cut into cubes and boil separately ( reserve 1/4 cup ( 50 ml ) stock )
1 tablespoon oil
1 onion, finely sliced
1 tablespoon ginger - garlic paste
1/2 teaspoon red chilli powder
1/4 teaspoon turmeric powder
1/2 teaspoon salt ( or to taste )

Method
Wash and clean methi leaves ( fenugreek leaves ) and cut into small pieces.
Heat oil in a frying pan / kadai. Add finely sliced onion and fry till golden brown.
Add ginger - garlic paste and saute for 2 - 3 minutes or until the raw smell disappears.
Add red chilli powder and turmeric powder. Mix well.
Add boiled potatoes, methi leaves, reserved potato stock 50 ml ( or sprinkle 2 - 3 tablespoon normal water ) and salt to taste.
Heat oil in a frying pan / kadai. Add finely sliced onion and fry till golden brown.
Add ginger - garlic paste and saute for 2 - 3 minutes or until the raw smell disappears.
Add red chilli powder and turmeric powder. Mix well.
Add boiled potatoes, methi leaves, reserved potato stock 50 ml ( or sprinkle 2 - 3 tablespoon normal water ) and salt to taste.
Cover with a lid and cook on a low to medium heat for 10 - 12 minutes or until done and water dries up / methi leaves well blended with potatoes.
Serve as a side dish with Rotis / Rice / Parathas ..
