You will need
Sufficient dosa batter ( approximately 6 ladleful )
2 onions, finely chopped

A couple of tips to make uthappam very nice and pretty:
Select tomatoes which are medium ripe ( ensure they are not too ripe – else the tomato juice will ooze out and spoil the composition and texture of dosa top).
Cut the vegetables (tomato, onion etc) to be sprinkled only at the last moment – If they are cut well in advance, the juice / water will start oozing out from the vegetables and again spoil the uthappam top.

Method
Heat a heavy - bottomed wrought iron griddle or non stick dosa pan on a medium heat.
Grease with little oil / ghee.
Make the dosa by placing a ladleful ( approximately 120 ml ) of batter on the centre. Do not make more circles. It should be thicker than the normal dosa. Cover with a lid and cook for 2 -3 minutes.
Sprinkle 1/2 teaspoon ghee or oil.

Spread the chopped pieces of tomato, onion and coriander leaves on the batter evenly and press with a flat spatula.
Flip carefully ( it’s normal for a few pieces of onions or tomato to fall off during this process ) and roast the other side till golden color on medium heat ( 2 - 3 minutes ).
When ready, carefully remove with the help of a thin spatula.
Sprinkle grated cheese ( optional ).
Serve hot with coconut chutney & sambar. Other accompaniments - Medu vada and Filter coffee.
